Korean for Veggies: Kimchi Pancakes & Banchan
Kimchi Pancakes, Momofuku Apple Slaw, Soy-Braised Tofu, Spring Onion Salad & Sesame-Soy Potatoes.
People are often surprised by how veggie-friendly Korean food is, but there's so much more to this food culture than BBQ. This no-compromise vegetarian/vegan Bash Box runs the gamut of the Korean palate. It's spicy, savoury, funky, sweet, crunchy, creamy, soft, fresh. It's anything but an afterthought.
In just 90 mins you'll create the lightest, most moreish rice & kimchi pancakes; discover the delicious simplicity of potatoes braised in soy, honey & little else; recreate a (frankly, genius) kimchi apple slaw from NYC's Momofuku restaurant; and learn how to cook tofu right.
While all of our dishes are authentic (well, maybe not the Greek yoghurt), they have been chosen and tweaked for Irish tastes, so you should feel comfortable cooking this Bash Box for people who haven't eaten Korean food before.
This kit has two options - vegetarian or vegan. The difference is that we substitute greek yoghurt for soy or coconut in the vegan kit, and have a different recipe for the kimchi pancakes. The vegetarian pancake recipe includes eggs and is a little lighter, while the vegan pancakes are eggless, denser. Select your preference when you add to cart.

We’re recipe testers, not recipe writers. All of the dishes in this Bash Box are adapted from published recipes created by people who know Korean food better than us. The Kimchi Apple Slaw is an adaptation from the epic Momofuku cookbook, the Kimchi Pancakes are an adaptation from Yotam Ottolenchi & Ixta Belfridge’s Flavour (an absolute must-have for adventurous vegetable loving cooks) with a soy spinach salad on top from Meera Sodha’s East (really great, simple Asian recipes that are easy to shop for). The other delicious sides are from a highly-recommended book with authentic but straight-forward recipes called Korean Home Cooking by Sohui Kim.
