Easy Chicken Tinga Tacos & Charred Corn Salad

Smoky, sweet, spicy and on the table in under an hour: Chicken Tinga Tacos offer all the flavour of Mexican home cooking without the hassle.

Your dish starts with chipotle chillies, steeped in hot water to revive them before simmering in a rich tomato sauce. While the Tinga is blipping, you'll poach the chicken with aromatics (for the juiciest results). Once cooked, shred the chicken, stir it through the sauce and you're ready to serve.

We include feta and coriander to garnish but sour cream, hot sauce or any other cheese are all great options too.

Charred Corn Salad is an optional (but excellent) addition to your Bash. Umami-rich from a base of shallots & bacon, fresh from a handful of herbs, creamy from cheese and a dollop of mayo (trust us) and with great crunch from the charred corn. Technically it's at least one of your five a day, but it's not like any salad we've ever met. 

Even with the sides your Bash will be ready in under an hour, with very little ingredient chopping or dishwashing.

At Bash we don't create original recipes, we adapt them from people who know better than us and aim to give credit where credit is due. The value we offer is in extensive recipe testing and ingredient sourcing. The recipes in this kit are adapted from the following:

  • The Chicken Tinga Tacos recipe is adapted from our favourite Mexican cookbook, Nopalito. It's a fantastic option for anyone who wants to get into cooking Mexican food - accessible without being dumbed down. 
  • The Charred Corn Salad is an adaptation of a fantastic side dish from Ama, a cookbook from the Texas restaurant of the same name. It's more Tex-Mex, think super nachos and enchiladas.
