Butter Chicken, Caramelized Onion Rice & Creamy Cardamom Broccoli

No matter how good your local takeaway is, we bet that this is better. Marinated overnight in garlic, ginger and spices, the chicken is threaded onto skewers and blasted under the grill (to blacken the edges) before finishing it off in a rich, creamy sauce. The rice meanwhile, is a sweet and sour tangle of caramelized red onions, fresh curry leaves and tamarind. To balance the decadence, we've also included some broccoli. That earned us some healthy points before we smothered it in cream cheese, yoghurt and cardamom...

  • Our Butter Chicken is an original mash-up of recipes in The Dishoom Cookbook, by far the best Indian cookbook for experienced cooks; and Rick Stein's India, which is the book we would most recommend to those just starting out with Indian food.
  • Both the broccoli and rice recipes are close adaptations of Meera Sodha's Fresh India, which is an inspired take on vegetarian Indian food that's as good for non-veggies who occasionally like to eat a little lighter, as veggies. Meera has a bunch of books and a regular column in the Guardian's food magazine, they're all great but this is our favourite.
