Paneer & Pea Makhanwala, Caramelized Red Onion Rice & Creamy Cardamom Broccoli

For anyone who has tried and failed to cook paneer before, this one's for you. The secret is marinating it, browning it under a very hot grill, then finishing it off in a rich, spicy tomato sauce. That gives it a little colour but keeps it meltingly soft, with no rubberiness. 

Offsetting the richness of our Makhanwala sauce (also known as Butter sauce or Masala), is our tangy Caramelized Red Onion Rice, with pops of mustard seeds and fresh curry leaves. And the chaser; broccoli crusted in a mix of cream cheese, yoghurt and cardamom, then baked until crispy around the edges. This is about as indulgent as vegetarian food gets.

This kit is naturally gluten-free but please be aware that we pack many wheat products at our HQ and so do not recommend any of our boxes for people with severe allergies.

  • Our Paneer Makhanwala is an original mash-up of recipes in The Dishoom Cookbook, by far the best Indian cookbook for experienced cooks; and Rick Stein's India, which is the book we would most recommend to those just starting out with Indian food.
  • Both the broccoli and rice recipes are close adaptations of Meera Sodha's Fresh India, which is an inspired take on vegetarian Indian food that's as good for non-veggies who occasionally like to eat a little lighter, as veggies. Meera has a bunch of books and a regular column in the Guardian's food magazine, they're all great but this is our favourite.
